Honey and Almond Granola

Granola makes for a perfect treat. You can add it to your yogurt, enjoy some with milk, add a little extra crunch to your desserts, or simply eat it by the handful. While the store bought ones can be good, I feel the homemade version is much better. You can go as wild as you want with all the endless flavor combinations and you can enjoy knowing what goes in.

This is a classic simple honey almond granola; with 7 ingredients and 15 minutes in the oven you will have hot, fresh, and delicious granola in a snap!

Ingredients:

  • 4 cups of old fashioned oats
  • 3/4 of a cup of sweetened coconut flakes
  • 3/4 of a cup of sliced almonds
  • 1/4 of a cup of vegetable oil
  • 1/4 of a cup of honey
  • 1/4 of a cup of light brown sugar
  • 1 teaspoon of vanilla extract

First I preheated the oven to 300 degrees.

In a large bowl I mixed together 4 cups of oats, 3/4 of a cup of sweetened coconut flakes, and 3/4 of a cup of sliced almonds.  I set this aside for later.

In a small bowl I mixed together 1/4 of a cup of vegetable oil, 1/4 of a cup of honey, 1/4 of a cup of light brown sugar, and 1 teaspoon of vanilla extract.

Next I added the wet ingredients to the oat mixture and stirred it together until well incorporated.
This mixture should be slightly damp.

On two cookie sheets, I divided and evenly spread out the oat mixture forming a thin layer.

I placed the granola into the oven and baked it for 15 minutes. I rotated the cookie sheets and stirred the granola halfway through.

Once the 15 minutes was up I allowed the granola to cool on top of the stove. The granola will be a light golden brown color and slightly moist. The granola will continue to crisp up as it cools.

The crunchy almonds, toasted coconut, and sweetened crispy oats are a perfect match. Served over some yogurt, with blueberries, and a bit of honey drizzled on top makes for a great treat!
