Monster Cookies

Roarrrr! Monster cookies in the house! Ok, I am sorry about that, but I thought you should know what I have been saying all morning. I wanted a cookie today, and not just any cookie, but a cookie loaded with peanut butter, chocolate chips, chocolate candies, and *oats*. Even though I know oats work as a binder and add more texture, I like to use extra emphasis when saying “oats” to let Matthew know that there is some nutritious value in this cookie as well. 🙂

I used a recipe from sallysbakingaddiction.com.

Ingredients: (yields 18 cookies)

  • 1 stick of unsalted butter, room temperature
  • 1/2 cup of light brown sugar
  • 1/4 of a cup of sugar
  • 3/4 of a cup of creamy peanut butter
  • 1 egg, room temperature
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of baking soda
  • 1 1/4 cup of all purpose flour
  • 1/2 cup of quick oats
  • 3/4 of a cup of M&Ms ( I used a mix of peanut butter and plain)
  • 1/2 cup of semi sweet chocolate chips
  • 1/4 teaspoon of salt

To begin, using the mixer bowl, I creamed together 1 stick of unsalted butter, 1/4 of a cup of sugar, and 1/2 of a cup of brown sugar.

Then I added 3/4 of a cup of peanut butter, 1 egg, and 1 teaspoon of vanilla. I mixed until combined.

To the batter I added 1 1/4 cups of flour and a 1/2 teaspoon of baking soda. I mixed until incorporated, making sure not to over mix.

Then I folded in 1/2 cup of quick oats, 3/4 of a cup of M&Ms, and 1/2 of a cup of semi sweet chocolate chips. I mixed until incorporated.

I covered the dough with plastic wrap and refrigerated it for 30 minutes. While the dough was chilling I preheated the oven to 350 degrees.

Once the 30 minutes was up, I rolled each cookie into a 2 tablespoon sized balls and evenly spaced them on the bread stone.

I pressed 1 to 2 M&Ms into the top of each cookie and lightly flattened each cookie with the bottom of a clean measuring cup. I used caution as my bread stone was piping hot.

Then I baked the cookies for 10 minutes. I then lightly flattened the cookies once more with a clean measuring cup and allowed them to cool.

Theses cookies turned out perfectly! They are a peanut butter lovers delight. They have a soft exterior with a thick, moist peanut butter flavor loaded with crisp chocolate candies and chocolate chips in every bite. Pair these with a glass of ice cold milk and you’re set.
