White Chocolate Macadamia Nut Cookies

I am still on the quest for collecting cookie recipes to add to my repertoire. I suspect that this will be a life long quest, but none the less, here is the latest update I have. This white chocolate macadamia nut cookie is a nice change on the ol’ basic chocolate chip cookie. The sweet white chocolate, crunch of nuts, and the subtle hint of vanilla pairs so well with an afternoon coffee. I used a recipe from the-girl-who-ate-everything.

Ingredients: (yields 24 2 tablespoon sized cookies)

  • 2 cups of all – purpose flour
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 3/4 of a cup of unsalted butter, melted
  • 1 cup of brown sugar, packed
  • 1/2 cup of granulated sugar
  • 1 egg
  • 1 egg yolk
  • 1 tablespoon of vanilla
  • 1 1/2 cup raw macadamia nuts, chopped
  • 2 cups of white chocolate chips
I began by preheating the oven to 325 degrees. In a small pot I melted 3/4 of a cup of butter over low heat. I set the butter aside to cool slightly.
In the mixer bowl I mixed together 1 cup of brown sugar, 1/2 of a cup of granulated sugar, and 3/4 of a cup of melted butter. I mixed that until incorporated.
To the sugar mixture I added 1 egg, 1 egg yolk, and 1 tablespoon of vanilla extract. I mixed until combined. The additional egg yolk helps to ensure extra chewy cookies.
Then in a separate bowl I mixed together 2 cups of flour, 1/2 of a teaspoon of baking soda, and 1/2 of a teaspoon of salt.

In two equal parts I added the flour mixture to the batter until just combined, making sure not to over mix.
I mixed in 2 cups of white chocolate chips and 1 1/2 cups of chopped macadamia nuts. I stirred this by hand until well incorporated. It is important not to use the mixer here to avoid over mixing and resulting in tougher cookies.
After mixing, I shaped 24 two tablespoon sized balls.
Then I evenly spaced 8 of the cookies at a time on the bread stone. I slightly flattened each dough ball.
I baked the cookies on the middle rack for 12 minutes, rotating halfway through. 

These cookies have a soft center with a slightly crisp outside. They are packed with macadamia nuts and white chocolate chips, providing a mixed mouthful of crunchy and sweet delights in each bite. A perfect treat served with coffee, tea, or an iced glass of milk.
