Apple Pie Bars

This week our family sent us a lovely box of Cortland apples! These apples have a great sweet flavor which makes them perfect for snacking and great for baking.

As I gathered up the apples sure enough my cat had wandered in to scope out the now emptied box. She loves boxes and it doesn’t matter to her if she is to big for the the box or not she will wedge herself in regardless.

While I was mulling over all the ways to put these apples to good use, I noticed the recipe that came with the box. It was an apple dream bar recipe that Matthew’s mother had mentioned her family enjoyed.

These bars are terrific. They are packed with sweet and tender apples, with a hint of warm cinnamon, and a nice crunch from the walnuts all resting on a tender and buttery crust. Dreamy… 🙂

Ingredients:

  • 1 1/2 cups of flour plus 2 tablespoons
  • 1/2 cup of sugar
  • 1/2 cup of butter, softened
  • 4 cups of apples, peeled and sliced
  • 1 1/2 of brown sugar
  • 1/2 teaspoon of cinnamon
  • 3 eggs, room temperature
  • 1/4 teaspoon of salt
  • 1/2 cup of sweetened coconut
  • 1/2 cup of walnuts, chopped
I began by preheating the oven to 350 degrees and greasing a 9 x 13 inch pan.
In the mixer bowl I added 1 1/2 cups of flour, 1/2 of a cup of sugar, and 1/2 of a cup of butter. I mixed until incorporated. 
Then I gently pressed the dough into the greased pan.
I placed 4 cups of sliced apples over the dough mixture. 
Then I sprinkled 1/2 of a cup of brown sugar and 1/2 of a teaspoon of cinnamon over the apples.
I baked it for 30 minutes.
While the apples were baking, I mixed together 3 eggs, 1 cup of brown sugar, 1/4 of a teaspoon of salt, 2 tablespoons of flour, 1/2 of a cup coconut, and 1/2 of a cup of walnuts. I mixed until combined.
After 30 minutes I evenly poured the batter over the apples and baked the bars for another 20 minutes.
I let the bars cool completely before cutting them into bars.
